Karaj is unique Hungarian style pork loin. It is dry cured and cold smoked for 1-3 days, which makes it incredibly smoky. It has a delicate, tender, almost juicy texture. Very lean. It isn't spicy even though it is packed with flavor.
Ingredients: pork loin cured with salt, sugar, sodium lactate, ascorbic acid (vitamin C), sodium nitrite.
