Cordobes is a semi-soft Spanish cheese made from Castellana and Merino sheep’s milk. It has a dry texture, a buttery, rich taste with some acidity and a nutty finish. This cheese resembles Manchego in texture and appearance yet has distinct tang all its own.
Suggested wine pairing: Spanish white blend based on Verdejo or Viura.
Mitica is one of the biggest importers of artisanal, gourmet cheeses in the United States.
Ingredients: pasteurized sheep's milk, rennet, salt, enzymes, lysozyme (from egg white).

All cheeses we slice to order and wrap in cheese paper as we want you to enjoy original flavor of cheese - not damaged by vacuum or plastic.
All meats which require slicing we slice to order and lay it out on wax paper (deli-style) so it is easy to separate slices. Then we pack it in a plastic pouch with nitrogen purge (again, to make it easy to separate pieces we don't vacuum the meats).
