Mahón is cow’s milk cheese from Spain. It boasts a certain sharpness with lemony and salty flavors. It will make you dream of the Mediterranean Sea and the perfect glass of Tempranillo! Mahon Reserva is aged for 8 month.
This cheese comes from Minorca, one of the Balearic Islands off the north-east coast of Spain. It was originally made from the local sheep’s milk, but during the brief British occupation in the eighteenth century, cattle were shipped in and the local cheesemakers were persuaded to change to cow’s milk.
The yellow-ivory interior, with its small, irregular holes, contrasts with the bright orange rind whose color comes not from bacteria, but from being rubbed with butter, paprika, and oil.
