Zamorano DOP

Nomadic shepherds have been making Zamorano for centuries. It is a firm cheese made from the raw milk of Castellano and/or Churra sheep and takes its name from Zamora, an ancient city that sits on the banks of the Duero River. Zamorano has a less grainy texture than Manchego but the same herringbone imprint on the rind. It is slightly piquant and full flavored with a nutty finish, and can be mildly gamey and earthy.

Pairs fantastically with a Crianza red or a peppery Tempranillo.

Ingredients: raw churra and castellana sheep's milk, salt, animal rennet, lysozyme (from egg). CONTAINS: MILK.
