A matured gruyère made from raw cow's is full-bodied with a slightly crumbly texture. Conveys the perfectly balanced notes of herbs, fruits, and leather.

It was described by judges at the 2022 World Cheese Awards held in on November 2nd as a "really refined, hand-crafted cheese that melts on your tongue" which led it to be given the highest accolade of World Champion Cheese.

I think I am just uncultured. I was not too fond of it but since it did win the significant cheese award I'll give it 3 stars. However, it did make my S.O. very turned on which was a plus. It was a gift from my boss.
