This Comte made by La famille Sancey-Richard selected and aged by Fromagerie Beillevaire. The Comte has a brown natural rind. The paste is yellow sprinkled with white hues - the milk protein crystallized by the maturation. The texture is buttery and the flavors are rich and intense. You will get some roasted coffee aroma or a touch of dry fruits.
To comply with Comte specifications, the breed of cows used are Montbeliarde or Simental. The Comte is a pressed and cooked cheese. It is unpasteurized but suitable for pregnant women. Beillevaire ages the cheeses in their own Cellar at Vieu D'Izenav with a consistent and high humidity level of 95% and consistent temperature of 12 to 13 degrees Celsius all year long.
Aged for 24 month.
