Bierdeckle Beer Washed

Just in time for Oktoberfest, comes a limited-edition cheese from producer Albert Kraus, Bierdeckle!
Bierdeckle is a beer washed cheese created to help celebrate the Fall harvest festival. Albert has partnered with local brewery Klier-Bräu, located just under an hour from his dairy, to source a wonderful Hefeweizen beer for the wash.
The cheese is aged for approximately six months. While the cheese is aging, Albert washes the cheese twice a week with a solution that is two thirds brine and one third beer. Thanks to technology, Albert can wash up to 120 wheels per hour, drastically reducing the amount of time and labor involved for the project.
The cheese is balanced between beefy alpine notes and a sweeter finish. The Hefeweizen adds a yeasty, bread quality towards the rind, and a malty sweetness to the paste itself.
Ingredients: Raw cow milk, salt, cultures, rennet, beer.
