Pascal Beillevaire Selection (Pays de la Loire, France) - This pasteurized goat's milk cheese is pressed to a semi soft texture. During aging, the rind is washed with a blend of sweet white wine, resulting in a beautiful mottled orange and yellow exterior when mature. Within, the cheese's texture is buttery with a slight spring to the touch, and the flavor is mild with a gentle tartness characteristic of goat's milk. A memorable snacking cheese to return to again and again!
Fantastic paired with salted Marcona almonds or dark berry jam.
Ingredients: pasteurized goat's milk, salt, lactic ferments, lysozyme (egg). On the nonedible rind: annatto, natamycin, Muscadet.
