Produced by Swiss cheesemaker Vorderfultigen and by refiner Gourmino, this mature gruyère made from raw cow's is full-bodied with a slightly crumbly texture. Judges remarked on how it practically melts on your tongue and conveys the perfectly balanced notes of herbs, fruits, and leather. It was described as a "really refined, hand-crafted cheese.
