Bleu D'Auvergne L'or Des Domes
by Societe Fromagere Livradois. Product of Auvergne, France.
Blue veined cheese made from unpasteurized cow's milk. Aged for over 60 days.
Named after the magnificent mountainous region where it is made, this is a moist, creamy cheese that resembles Roquefort, although it is made with cow’s milk, not sheep’s milk. It has piquant smell and sharp, clean taste with a hint of herbs and melted butter. The cheese is composed of pockets and broken threads of bluish-Grey mold. With age, the crust becomes sticky and reddish-orange molds start to develop. These help to break down the interior, which gradually collapses, intensifying the spicy flavor.
Ingredients: unpasteurized cow's milk, salt, rennet, cheese cultures, calcium chloride, penicillium roqeforti. CONTAINS: MILK
