Bundnerfleisch is a traditional Swiss dried and smoked beef top round. It is originally was produced in the canton of Graubünden, Switzerland. During curing process meat is pressed with the purpose to get rig of residual moisture - it is how meat get it's square shape. 

This is an American version and it is smoked - please don't expect it to taste exactly the same as Bundnerfleisch in Switzerland. 

Ingredients: beef, salt, sodium nitrite.

We ship perishable items in thermo-insulated cardboard boxes with reusable ice packs to insure that you food items arrive in good shape.

All cheeses we slice to order and wrap in cheese paper as we want you to enjoy original flavor of cheese - not damaged by vacuum or plastic.

All meats which require slicing we slice to order and lay it out on wax paper (deli-style) so it is easy to separate slices. Then we pack it in a plastic pouch with nitrogen purge (again, to make it easy to separate pieces we don't vacuum the meats but use commercial style food grade inert gas mix).

CALIFORNIA: Monday - Thursday. 

OUTSIDE OF CALIFORNIA: Monday - Wednesday. 

Note that the shipping method (for example, overnight) doesn't mean that your order will be processed and shipped on the same day you placed the order. Generally, allow us at least one day for processing your order as we slice and wrap everything by hand to order.

Any US federal holidays may delay the shipment.

As close to the real thing as possible

The Bündnerfleisch (viande des grisons) I’ve gotten twice here is virtually indistinguishable from what one gets in Switzerland. It’s sliced paper-thin, as it should be, and comes wrapped in a way that keeps for quite a while. Altogether a top-notch product.

Not authentic?

Although the product was OK I was disappointed, Previously I only had a non-smoked preparation. I will continue to look for s source for a non smoked Bundnerfleich.

Close enough to the real thing...

This Bündnerfleisch (or viande des Grisons) is an American product, but very close to the Swiss original. It’s sliced very thin, as it should be, and vacuum sealed so it’s still tasty and succulent.

You might think to yourself, cow. How could the cow be improved? It is unclear at the age of 22 having been exposed to the world of steaks and intestines how this peaceful beast could be experienced, but alas it is the bundnerfleisch.
