Cashel Blue is a semi-soft, creamy Irish farmhouse cheese, distinguished by its round, full flavor and signature tang. Its buttery color is punctuated by characteristic blue veining. Lovingly crafted by hand on the same 200 acre farm in Ireland that it has been since the early 1980's by the Grubb Family. Cashel Blue Cheese is made with milk from grass-fed dairy cows that graze on some of Ireland’s most lush and nutrient rich pastures. Cashel Blue has earned gold many times since 2009 at the International Cheese Awards held annually in Natwich, U.K. Cashel Blue’s robust flavor profile makes it a worthy companion to grilled steak, ripe pears or figs and an absolute godsend for leafy green salads. All-natural Cashel Blue Cheese is a true masterpiece of Irish dairy.
This cheese doesn't leave the facility for 6 to 10 weeks of age and has a pleasant, firm and creaminess with a blue character and a mouth-watering tanginess. By 3 months of maturation your Cashel Blue will have broken down to a richer, fuller and rounder yet not overly strong flavor.

We ship perishable items in thermo-insulated cardboard boxes with reusable ice packs to insure that you food items arrive in good shape.
All cheeses we slice to order and wrap in cheese paper as we want you to enjoy original flavor of cheese - not damaged by vacuum or plastic.
All meats which require slicing we slice to order and lay it out on wax paper (deli-style) so it is easy to separate slices. Then we pack it in a plastic pouch with nitrogen purge (again, to make it easy to separate pieces we don't vacuum the meats but use commercial style food grade inert gas mix).

CALIFORNIA: Monday - Thursday.
OUTSIDE OF CALIFORNIA: Monday - Wednesday.
Note that the shipping method (for example, overnight) doesn't mean that your order will be processed and shipped on the same day you placed the order. Generally, allow us at least one day for processing your order as we slice and wrap everything by hand to order.
Any US federal holidays may delay the shipment.
