Comeback Cow Brie is creamy but with a kick. Mild but complex. A rich and creamy cheese with a flower-shaped body and soft white mold exterior. A velvety milk taste is underlined by sweet and buttery flavors of mushrooms and almonds. Wild grasses and sweet flowers has lent its flavors to the milk. Comeback Cow is a flavorful, artisanal cheese perfect on its own on your favorite cheese board, although it is also delightfully melty in grilled sandwiches and quiches. Place it with some sweet fruit for a well balanced bite. A diverse Brie ready for any occasion. Also quite delicious with a bold red wine like a Bourgogne, Cabernet, or any Bordeaux.
