Very good melted but Old Quebec is better.

You have to melt this cheese to experience it’s magic. This is a great cheese and I would give it 5 stars if I had never had Old Quebec 7 year which I think is even better. Barber 1833 is in the same style and also excellent and Prairie Breeze while not as aged is amazing. I do not like Hooks aged cheddar which has a 7 year and all the way up to 15 year but I find it bitter.
