Soft-ripened cheese from France washed in brine and Marc de Bourgogne.
The cheese has a powerful rich flavour with a pungent smell, the pate, a mouth watering taste of sweet, salty and creamy milk flavours. Like many washed-rind cheese, Epoisses smells stronger than it tastes. Its flavors are garlicky, fruity, and mushroomy with a hint of barnyard.
Suggested pairing: a medium bodied red wine such as Burgundy or an Alsatian Gewurztraminer

All meats which require slicing we slice to order and lay it out on wax paper (deli-style) so it is easy to separate slices. Then we pack it in a plastic pouch with nitrogen purge (again, to make it easy to separate pieces we don't vacuum the meats).
