Doesn't mix with with swiss gruyere

Just used french emmanthale for the first time for fondue. What a bust. The French is too sweet and soft...evidently has a higher melting point than the gruyere. The swiss emmanthale never melted into the fondue all the way, remains lumpy. We've been making fondue for many years and never had any problems with both SWISS gruyere and emmanthaler. We don't recommend using French.

Absolutely delicious!

The French Emmental is superb! It has a perfectly balanced flavor of being nutty and creamy. It is fantastic slightly warmed with lovely squeaky curd like texture. One of my absolute favorites.
