Karaj is Hungarian style pork loin. It is dry cured and cold smoked for several days, which makes it incredibly smoky. It has a delicate, tender, almost juicy texture. Very lean. It isn't spicy even though it is packed with flavor. The closest comparable meat is German cold-smoked pork loin lachccchinken. These two meats are commonly mistaken for smoked salmon because flavor and texture indeed reminiscent of smoked salmon.
Ingredients: pork loin cured with salt, sugar, sodium lactate, ascorbic acid (vitamin C), sodium nitrite.
