ETIVAZ (Etivaz, Switzerland) – Created in the 1930’s when a group of cheesemakers pulled out of the government’s Gruyere program to make their own cheese, Etivaz is made in the mountain chalets using raw summer cow’s milk. Only traditional copper cauldrons and open fires may be used in production. Gourmino selects wheels which exemplify the flora of the fields on which the cows graze, offering flavors of light caramel and alpine chamomile, balanced with notes of savory leek and speck.
