Made in the traditional Italian way, Columbus uses select cuts of lean pork shoulder that are spiced with nutmeg, cinnamon, and whole black peppercorns, then slow-cooked.
Mortadella is a large Italian sausage or luncheon meat made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat.
Mortadella is delicious in a cold sandwich or hot panini, it can make a nice addition to cheesy pastas dishes or stuff it into your raviolis. It can be an extra-flavorful and savory addition to Italian meatball recipes as well. Don't forget to blend the extra bits to make a velvety savory spread for crackers and sliced baguette.
