Musenalp Alpkäse is a traditional, raw cow's milk Alpine cheese from the Musenalp in the Uri canton of Switzerland, known for its small-scale production, wood-fired heating, and unique grassy-floral flavor with a nutty finish. It's made by the Herger-Gysin family, who milk their cows by hand in the high mountain pastures during the summer. The milk is transported by cable car to the dairy, where it's heated over a wood fire, and then aged.
