Ossau Iraty PDO

Small village of Macaye is located at the foot of the Pyrenees Mountains, right in the heart of Basque Country - center of the milk collection area for Ossau-Iraty. Onetik process milk from around 250 farms, to produce an authentic and succulent cheese using ancestral techniques and traditional know-how at our state-of-the-art facility.
The wheels are aged in the cellars (haloirs) where they develop unique aromas and yeasts found only in the facility… one of Onetik’s little secrets.
Ossau Iraty by Onetik is traditional Basque Ossau Iraty cheese proudly bears the PDO Protected Designation of Origin label. This cheese is made exclusively with milk from local breeds of sheep (Manech and Basco-Bearnaise). It has a succulent and complex flavor, developing notes of hazelnut and caramel as it matures.
Ingredients: pasteurized sheep's milk, salt, starter, rennet.
We ship perishable items in thermo-insulated cardboard boxes with reusable ice packs to insure that you food items arrive in good shape.
All cheeses we slice to order and wrap in cheese paper as we want you to enjoy original flavor of cheese - not damaged by vacuum or plastic.
All meats which require slicing we slice to order and lay it out on wax paper (deli-style) so it is easy to separate slices. Then we pack it in a plastic pouch with nitrogen purge (again, to make it easy to separate pieces we don't vacuum the meats but use commercial style food grade inert gas mix).
CALIFORNIA: Monday - Thursday. Cut off time for orders is 3.30 pm PST.
OUTSIDE OF CALIFORNIA: Monday - Wednesday. Cut off time for orders is 12.30 pm PST.
Note that the shipping method (for example, overnight) doesn't mean that your order will be processed and shipped on the same day you placed the order. Generally, allow us at least one day for processing your order.
