Provolone Piccante

Provolone Picante (Lombardy, Italy) – Firm cheese made from cow’s milk. This cheese has a smooth rind and is often wrapped in twine. It comes in a variety of forms and may be shaped like a salami, melon, cone or pear; it may also have a spherical knob on the top. The taste varies from sweet to sharp depending on the type of rennet used. Veal rennet yields a sweet cheese; lamb or kid rennet yields one with a sharper taste.

Aged for a minimum of 12 month.

Pairs well with simple, inexpensive Italian reds such as Chianti Classico or beer. 

Ingredients: raw cow's milk, salt, rennet, cheese cultures. CONTAINS: MILK.
