The saved cheese from Crema. Salva is a derivative of the Italian word meaning to save. In this case some of the milk generally used in Taleggio production is saved to use in these larger wheels that are then aged longer. Made with pasteurized cow’s milk, one can get a bit of Taleggio like flavor but then much more earthiness, mushroominess.
