Brebirousse D'Argental is soft cheese made from pasteurized sheep’s milk. This cheese has a thin, delicately washed rind that is bright orange, gorgeously showcasing the mild and shockingly creamy pâte beneath. Its texture is smooth and velvety, and the flavor is reminiscent of fresh hay; the finish is graceful, with a slight tang, very much like very thick cream. Play up savory notes with thick slices of ham on crusty baguette, tease out the milky sweetness with dried apricots, or enhance the intensity with a dollop of earthy chestnut honey, alongside a glass of bubbly cava.
