Taleggio DOP Defendi

Taleggio is a semi-soft to soft cheese made from cow’s milk. Its flavor can range from mild to pungent, depending on its age. The rind is typically pink; some green mold may also be present. When young, its color is pale yellow and its texture semi-soft.
