by Sequatchie Cove Creamery. Product of Tennessee, USA.

The newest cheese in Sequatchie Cove Creamery's line up! Named for the southeast wall of the Sequatchie Valley, Walden’s Ridge divides the Appalachian Plateau and in conjunction with the Cumberland Plateau, makes up an almost perfectly straight 150 mile long valley from Tennessee to Alabama.

Walden is an approachable and pasteurized alternative to a soft-ripened Reblochon style cheese. Buttered mushrooms and walnuts on the palette with a velvety texture.

Walden pairs well with lighter bodied fruity reds, crisp white wines, dry or semi-sweet hard ciders, floral honey, smoked salmon, and rustic crusty breads.

Ingredients: pasteurized cow's milk, salt, cultures. CONTAINS: MILK.

Rich and delicious

This was a really delightful soft cheese! It had an almost smokey flavor, very savory but still light. It's simple and clean; there are no exotic/creative mix-ins or rubs, and you don't miss them at all because the quality of the cheese shines on its own without needing any enhancement. The simplicity makes it pair well with so many things -- it always complements, never clashes. The texture was creamy and thick but it was still easily spread on some fresh bread. Possibly the best soft cheese I have had, and my boyfriend's favorite cheese of any kind!
