Kinderhook Mini is a delightful soft-ripened sheep's milk cheese. Although this soft-ripened cheese is in the style of a brie it is not as pungent or heavy as a traditional goat's milk brie. It has a nutty, straw-like taste, like its brie counterpart, but also has a little bit of a sweeter and fresher flavor. This sheep's milk cheese is also beautifully subtle yet more intense and complex than a traditional cow's milk Brie. It's exciting but light, steering clear of stinky cheese territory and far less potent than any wash-rind varieties while still standing in flavor. This soft-ripened mini round is made solely with sheep's milk and aged up to three weeks, producing a beautiful pale ivory paste inside its snow-white, bloomy rind.
